Save the Children is a World-Wide Charity, and with that, the Nights menu offers globally inspired dishes. This is a communal dinner *guest will be seated with other attendants*. Courses are served family style with the acceptation of the first and fifth. Wine will be served with each course at which time Elevage’s ambassador, Karen Grewal, will discuss the wines with a brief description of the entrée by the chef. "Beef Wellington empanada" braised beef, prosciutto, mushroom duxelle wrapped in empanada dough and baked. Served with a red wine demi glaze.

Nam Tok- Thai inspired salad served with marinated hanger steak, mint, Thai basil, shallot, green onion, and grape tomatoes. Tossed with a spiced Thai vinaigrette

Third Course
Bistecca Alla Fiorentina- Tuscan style, slow cooked porterhouse sous vide, then finished with a quick char sliced and garnished with sea salt and a sprig of rosemary. Served with roasted potatoes and arugula salad.

Fourth Course
Côte de Boeuf- French style bone-in ribeye pan seared and roasted with garlic, butter, thyme, and shallot. garnished with god’s butter (bone marrow butter) and accompanied by truffle mac and cheese.ca
